In the Kitchen: Granola

Easiest thing to make, easiest thing to eat- with milk, yogurt, plain, on ice cream… etc.


3 cups of rolled oats

1 cup of pecans or walnuts

1/2 cup of sunflower seeds

1/2 cup of uncooked coconut

1/2 cup of flax seeds

1/2 cup of pumpkin seeds

1/3 cup of vegetable oil

1/4 cup of honey

1/4 cup of maple syrup

1/4 cup of peanut butter (if you use peanut butter only use 1/4 cup of oil)

Mix nuts, oats, seeds and coconut together in a big bowl. Mix the liquids in the microwave until warm. Pour the liquid mixture over the dry mixture and toss to coat. Spread the granola onto a rimmed baking sheet and bake at 325 for 15 minutes, stirring the granola every five minutes. When the mixture is golden brown, remove from the oven. For an added sweetness, you can sprinkle brown sugar on it now. When it cools, remove it from the sheet with a spatula and store in airtight containers.

PS- It makes great gifts.

PPS- We are off to London to visit these girls (and obviously their parents) and I am trying to figure out how to keep up the “No Repeat Clothes” challenge while trying to fit it all into a rolling suitcase. I may grant myself a pass for this. Stay tuned.
